Cupcakegasm

I'm so stoked for Irish Car Bomber's birthday, so I can make him a big ol' tray of THESE. My college friend Teanna, over at Spork or Foon? adapted this recipe, and I can't wait to give it a shot.

How appropriate

So, I made this over the Weekend. Glad it was a snarky weekend, rainy and windy, otherwise I'm sure it wouldnt have gone over well.

Guiness Pie

4 tbsp butter
2 large red onions, chopped.
4 cloves garlic, minced
2 carrots, chopped
2 ribs celery, chopped
10 mushrooms, chopped
3lbs stew meat
sprig of rosemary
Kosher salt
black pepper
4 cans Guinness
8 oz grated cheddar

Preheat oven to 375.
Open Guinness.
Drink Guinness.
In large ovenproof pan(I used a Dutch oven) heat 2 tspb butter, garlic, and onions over medium heat about 10 min.
Add carrots, celery, mushrooms, and remaining butter. Cook until mushrooms are dark, and most of the remaining moisture has evaporated.
Season beef with salt and pepper, then add to pot with rosemary.
Cook for 5 -10 minutes on high heat.
Add enough Guinness to cover the beef. Cover pan and put in oven for 1 1/2 hours.
Open Guinness.
Drink Guinness.
After 1 1/2 hours, remove from oven, add half the cheddar.
Stir. If stew is thin, add flour and cook over medium heat until desired thickness
Return to oven for 1 hr.
Open Guinness.
Drink Guinness.
While stew is cooking, prepare and roll out pastry dough. Not going to post that process. You should know how to do that.
After 1 hr, remove from oven. Pour stew into 8x12 baking dish. Sprinkle with remaining cheddar. Cover with pastry dough.
Bake for 45 min.

Open Guinness.
Serve pie.
Drink Guinness.
